The integrated product availabilty is for a real inventory management not fully usable.
There are a couple of reasons to manage the inventory independent of the availabilty. Are eg. some products not in stock, but fast to order, you probable would show them as available, (and to ensure that they will be exported to Google). Or you want to show some products as short for marketing reasons.
But also the automatic stock reduction on ordering doesn't fit in all cases. Esp. if you have a lot of cash in advance orders.
